Organs that don't taste like liver or kidney? Does stomach or tongue taste like liver?

Hi I am curious about trying other organ meats besides liver or kidney. These 2 I have tried and, frankly, don't sit well with me.

I'm curious for example does stomach taste like liver? What about intestines or tongue?

These would be organs from wild boar. Thank you guys a million!!!

Yeah. Sweetbread has to be cooked properly. My first response was, "Kidney and Liver taste the way they are cooked" -- Offal is more of a texture than a taste to me -- That is assuming you have it fresh. Once liver starts to turn there's no saving it.

I've had barbecued sweetbreads with chimichurri sauce, it's pretty damn good. Just make them well done, otherwise the texture is a bit strange.

smoked tongue tastes like a mix between bacon and brisket. Slice thinly and serve with some bbq sauce

They don't sit well with you mentally or physically? Because if it is a problem with taste, you can chop the liver/kidney up and mix into a meatloaf or burger patties. You won't be able to taste it.

I found away around the taste so that I can get all of the nutrients everyday.

I buy frozen, pastured chicken livers and then cut them into "pill" sized pieces. Then I take a few, still frozen, each day and just swallow them frozen with some water.

No bad taste and they are raw...so the nutrients are all still very fresh.

Fresh liver is a lot better than regular liver (frozen liver, or store liver), so consider giving this animal a try. Although of all fresh livers I tried I consider rabbit and goat livers superior to the rest. I myself love cheeks, and brains. Heart can be rendered into a superior tartare, and can be thoroughly inspected ahead of grinding it if you so choose. But you have to make an effort to get the lard from this animal.

I like the taste of the soft tissue in fish heads. Chicken liver also tastes better and it is a much better source of methylated folate than other sources.

Cheek (is this considered meat or offal?) is delicious, especially beef and fish. Tastes like a fatty rib.

Sweetbread is good, serve coconut breaded and fried then drizzled with hot sauce.

Marrow (again, is this offal?) serve roasted, eat with a spoon -- never look back

Tripe -- make some pho broth, add meat and tripe

Also, I know you said ones that don't taste like kidney -- but try coconut curry kidney

Have you tried chicken hearts? Those are my favorite. Either cooked on the pan or in a delicious soup.

I don't *hate* liver, but the only way I enjoy eating it is with vinegar. You cook some liver, throw in a little bit of vinegar and spices, and it really does taste delicious. The vinegar I use comes from the Filipino store with condiments in it already.

Tongue is very mild, as is heart, sweetbreads and testicles. Granted, I eat a shitload of organs so muscle meat tastes mostly plain at this point. Veal liver and chicken liver is supposed to be one of the most mild livers. I've never had stomach as I can't get ahold of it uncleaned. Brain is supposed to taste almost like cheese.

Tongue is delicious! You should definitely try it. It's technically a muscle but it's exceptionally tender and soft, and somewhat fatty. Cook it in a slow cooker or in a pressure cooker, when it's done take off the skin and shred or pull the meat. Then cook this meat separately by adding spices and seasonings (cumin, oregano, garlic, onions, black pepper and salt are a good mix) plus oil (olive/lard/etc) and cook until it browns a little. You could drizzle it with some lemon juice right before eating it. A bit of work but it's quite good.
