I'm just curious about whether there is any evidence to show that a low fat diet leads to vitamin D deficiency. Both my parents have recently been told to take supplements and I'm suspicious that their low fat diets is part of the cause.

I believe it is because carbs raise your insulin levels which promotes fat storage. Thus if you don't have much fat in your blood, it cannot be stored in fat cells.

A Ver low carb, very low fat diet isn't a good idea.. You would be better off with a moderate to low carb, moderate protein, higher fat diet.
