I'm just curious about whether there is any evidence to show that a low fat diet leads to vitamin D deficiency. Both my parents have recently been told to take supplements and I'm suspicious that their low fat diets is part of the cause.

I believe it is because carbs raise your insulin levels which promotes fat storage. Thus if you don't have much fat in your blood, it cannot be stored in fat cells.

If I was to lower my fat should I up carbs or protein?

Up your carbs. Fats are largely energy, as are carbs, protein is lousy for energy.

It is a perfectly paleo approach to have very low consumption of both fat and animal products. Infact i'd argue that most of the studied paleo populations follow such a diet.
