Tracking both is easy with a number of different apps. I use MyFitnessPal, it's nice and free.

I believe that Mark Sisson's view is that as long as they average out to a good macro ratio(whatever that happens to be for you) and a calorie surplus/deficit that fits your goals it's all good. That makes sense to me.

I guess it depends what your goal is. Ideally you want to count your proteins in grams (IMO), carbs and fats are just a see-saw so it really doesn't matter as far as weight in grams go, unless you're trying to maintain something like ketosis. (more)

3 lbs a month sounds like a great growth rate to minimize fat gain. If that's the pace, I wouldn't screw with it, though the protein definitely seems a bit excessive--I'd probably donate 100g of that to my carbohydrate intake.
