I shoot for 50/35/15 (F/P/C) split with my daily macros, I consume 2700-2800 cals a day, 6'0 200 pounds 14% bf, moderately active I strength train 30-4 times a week. question is should I be more focused on how many grams of each or just the percentage? The reason I ask is that I am going over my daily recommended grams of protein and carbs (i try to stay around 125 carbs a day) to meet my daily caloric intake. should I eat more fat or just be concerned with the percentages rather than grams which would allow me to keep my current macro as splits.

I guess it depends what your goal is. Ideally you want to count your proteins in grams (IMO), carbs and fats are just a see-saw so it really doesn't matter as far as weight in grams go, unless you're trying to maintain something like ketosis.
