I was wondering if someone could help me create a strict meal plan to help me lose weight but be sufficient enough so I am getting the correct nutrients to stay energized.

Could I eat eggs, meat/chicken/salmon, avocado, butter, broccoli, kale and spinach and cover all the nutritional bases? Anything to add/remove/change? Berries and nuts, for example?

No. I would in fact make sure the butter is grass fed, to improve your low K2 intake. I would add some seaweed to counteract the goitrogenic effects of kale and broccoli, and I would eat at least a pound a day of your green veggies.

drop the fish oil and eat fish a couple of times a week.The more "optimal" diet would be to eat varied, so menu 1 day 1, menu 2 day 2, etc.

I'd add a little more time between fasts. More like a 4 hour window of eating if you can. I find that helped me get my last bit of body fat off when I worked out right before. Otherwise, you could do your plan and just skip completely one day... (more)
