Any variation on tortilla soup recipe w/out tortillas, perhaps with chicken?

i would second the carne asada but also carnitas is another great dish depending on whether you want beef (carne asada) or pork (carnitas). carnitas can be cooked in a crock pot so its a bit more minimal as far as time for a large amount of meat.... (more)

Who out there knows anything about Paleo Mexican food any suggestions I know the tortillas are out of the question and retried beans I love my refried beans

I'm from houston and we do a lot of fajitas without the tortillas, rice or beans. Still filling without the grains. So it's pretty much just meat, veggies, and guacamole. It stops me from feeling mexican food deprived. haha.

I can't find any on the ground to read the ingredients label. What is generally in it? Any brands to recommend?

Machaca or Carne Seca can be a great paleo dish, especially prepared from scratch. I would be wary of pre-packaged machaca though as the origin of the (usually) beef is unknown and could contain MSG. You want the ingredients list to say "Beef and... (more)
