Yes, you can. I do a lot of eggs. I try to mix up the types of protein I consume and I also supplement with gelatin a bit too, which has a lot of health benefits.

Run it through one of the online food programs like cronometer or paleotrack to see what the %'s are. Looks like a lot of protein as you mentioned. Might consider adding some potatoes, sweet or regular to the mix.

The average weight loss is a useless number in this situation since everyone is different. You should expect your weight to eventually get to your optimal weight, and stay there provided you stay paleo. The number isn't really important.
