Diced cauliflower, mozzarella cheese, and one egg. Baked with no toppings at 350 for 12-15 min to make the crust, well, crusty. Add the toppings and return to oven for 10 min or until all items are sizzling or browned.

I have always just substituted it 1 for 1. If it is drier for you, I'd just add more until the consistency is right. May I ask where you're getting these recipes and what flours you're using?

I eat spinach nearly every morning, though it probably wouldn't work in the oven as you described. I just toss it in a steamer basket and it's done in a few short minutes! Clean up is a breeze.

I like mine straight up with just sea salt and pepper -- but I also LOVE it with surprising/nuanced/subtle additions. One of my favorites is to add whole star anise to chicken broth. How about you?
I add all kinds of veggies (especially ones that NEED to be used) but I almost always add a bay leaf. Also, once done if you add some seaweed, I use wakame, and a bit of coconut aminos it is reminiscent of a lovely miso soup.u
