In regards to the Banana Pancakes...Isn't that a high carb/fructose count to begin the day?

I wonder about it's fructose content, since it's supposed to be lower glycemic, but I can't find any definitive data. Is it low glycemic in the same way that HFCS is low glycemic?

Why are you making pancakes? Even if you use coconut and almond flour, I don't think our ancestors had bur grinders. The only paleo food I can think of that's like a pancake is made of meat and goes by the name of "hamburger".

I keep seeing recipes for paleo pancakes floating around the blogosphere but don't know what to top them with. What do you top yours with? Any ideas for a maple syrup substitute (using maple extract, perhaps?)
