I've given up. Anything I've tried has been so horrible, it wasted, expensive products (coconut flour or almond meal) and fell so far from the low bar I set that I haven't tried in over 2 years. I'll go off-protocol now and then with some... (more)

I mash a banana with almond butter and fry like you would a pancake.

I saw coconut sugar at the store yesterday and was wondering what everyone's thoughts on this were? I assume it's not paleo because it reminds me of honey...but I am just curious. I try to limit my carbs to vegetables and fruit. I use stevia in... (more)

I have some in the cupboard, but have yet to use it. Mine is raw, organic coconut sugar. I consider it an item to be used scantily, and I have it mostly to offer to guests if they want a sweetener. ( I rarely have guests, which is why it remains... (more)

I avoid egg whites because of an autoimmune condition, but I can eat the yolks. I've tried to make pancakes and waffles with extra egg yolks, but for some reason, the yolks don't bind the coconut flour well (I can't use almond flour). Any... (more)

Avocado (2 tbsp mashed per egg) apparently works as an egg (and/or butter) replacement, though I'm not sure how it functions as a binder. I've baked with avocado, and it works well, but I haven't tried it as an egg replacement. Mashed banana,... (more)

I keep seeing recipes for paleo pancakes floating around the blogosphere but don't know what to top them with. What do you top yours with? Any ideas for a maple syrup substitute (using maple extract, perhaps?)

So i'd usually have pancakes made with protein powder an egg and some oats then have nut butter with it. Wondering what a good paleo substitute would be?
