Pumpkin isn't all that high carb anyway (not compared to sweet potatoes, white potatoes and even carrots). I don't see a problem here.

Pumpkin seeds have a great amount of protein, but I have not found any other non-animal products that are as high. Any ideas? BTW I eat lots of animal products, just looking to keep it diverse.

Dry roasted hazelnuts are 15% protein, dried black walnuts are 24% protein. That's about as high protein as vegetables get unless you use protein isolates or eat legumes.

I've read many times on here that pumpkin isn't low-carb. With 5g of carbs for every 100g of pumpkin, I find that hard to believe. So, am I thinking wrong? Nutrition data for pumpkin : data. (more)

To plan a diebetic diet it is not sufficient to calculate only the carb content of a food. Another important criterion is the glycemic index and pumpkin has 75 - which is considered high.

According to Gardens Ablaze the skin is edible but may be too tough unless it's a young pumpkin.

The same thing happens to me when i make banana bread, muffins or pumpkin muffins. You'll get that with any kind of fruit - it doesn't preserve. It'll be good for about 3 days or so. Definitely put half in the freezer so it keeps.
