I bought some uncured bacon from Whole Foods and saw evaporated cane juice as the last ingredient (others: pork, water, sea salt). It lists 0 g of sugar on the nutrition facts. Why? Is it because it's a negligible amount? I know evaporated cane juice is just a cute way of saying "yeah we added sugar," so why--when it's the only source of a sweetener in a food--does it usually show up as 0 g of sugar?
Secondly, has anyone noticed a reaction when they consume evap cane juice?
There's 6 slices left in the package I bought which I'll finish off tomorrow just to get rid of it. Hopefully that won't wreak too much havoc.
You're right evaporated cane juice is sugar. The other thing is that the USDA and FDA should be called "The Department of Leagalized Rounding". Note that it doesn't say "no sugar" but instead "0g sugar". There's a difference: 0g means less than 1/2 g per serving. So they add enough sugar to make it tasty but make sure it's under a 1/2g per serving and you can bet they go right up to the limit so just assume 1/2 per serving and then look at the serving size to see how much you're getting.
Same rules apply to "0g trams fat" and cholesterol and all of those. Even "gluten free" is legally defined as less than a certain amount and not "free of gluten" which you'd expect.
