I'm going to a week-long workshop hosted at an all vegetarian (mostly veg*n) lodge. Unfortunately I have no choice in the accommodations. I've been there once before, and it was lots of soy, beans, corn, wheat, and processed seed oils. My belly actually felt better eating at the Sonic burger in the next town over.

This time, I'm bringing a 54-quart cooler and am planning on packing all my own food. It will have to be cooked in advance. What would you bring?

My list so far: - boiled eggs - sardines - canned salmon - cooked sweet potato/winter squash - cooked beef burgers - roast chicken - stew/curry/soup in mason jars - kale chips - some fruit

I think you answered your own question pretty well! Other suggestions: nuts and jerky and coconut oil or butter. Also you should be able to harvest a lot of fruit and veggies off the meals provided. Talk to the chef about a dressing free salad (or fruit salad). That should be an easy accommodation. – Senneth Feb 24 2012 at 16:59

I can't believe they woulnd't have some salads (you can pass on the dressing) and non-legume fruits and vegetables! I would pick and choose from what's there and top up on nuts/jerky/boiled eggs I bring along if really starving. It's only a week, it could be like a modified fast. clear out your system. – gydle Feb 24 2012 at 17:59
I would love this. I'd just take a bag of gelatin with me, say it's flour and gulp it down behind everyone's back while eating lots of fruit :). And coconut would also be quite handy. – Korion Mar 30 2012 at 7:40

I go to a hot springs retreat center once a year or so that serves all vegetarian food, but lunch and dinner have a big salad with seeds and some other toppings that I can eat, so I mainly focus on protein additions. I pack:hard boiled eggs, sardines, smoked oysters, raw seed crackers, jerky, salami and other cold cuts, a couple avocados and a big jar of some kind of fermented veggie. I feel funny bringing my own food into the dining area because besides being a retreat center, it's an intentional community that is mostly made up of vegetarians, so I eat what I can at the meal, then eat more in my cabin, or I find out what the meal is ahead of time, eat in my cabin, then eat in the dining area. If there are salads served, but you don't have a dressing choice, bring your own dressing...

Thanks for all the answers/comments so far! To clarify on a couple points - they serve a fixed menu each night, so it's not buffet/salad bar style. They'll have salads with dinner a few nights, which I plan to take advantage of, but the remaining foods are all very heavily soy/bean/corn based (this community reveres soy for its "healing" properties...). I definitely won't be bringing my own food into the dining room - I don't want to offend anyone. I'll be eating on the deck of my own cabin for the most part. I go to one of these places once a year, too, and it always messes me up. I take extra protein and GDC (good dark chocolate, which makes everything all better).

What would happen if you told the chef that you had a soy/wheat sensitivity, or that you were trying to observe a gluten free diet? I would imagine that you're not the only one, and even if you just end up with a boatload of veggies, that would be ok (you could augment with the protein sources you have in your cooler).

i also really like paleo kits, and they're so darned portable and yummy.

Maybe eat like the "locals" for a week. Paleo and vegetarian are not mutually exclusive. Eggs, dairy, fruit & veg, all paleo. Even venturing into non-paleo things: rice and beans, neither are that terrible that you couldn't handle it for a week. Even a dose of gluten or two isn't going to kill you... Enjoy the week, don't worry about food.

Kidding aside, I think you've got a good list running. Maybe some nori to wrap up your canned fish in and some Larabars on the go.
