I know it's processed but I have trouble with strong fish flavors. What do you all think about Gefilte fish? Some brands, like Kedem, seem to be gluten free by ingredients. I've also seen it frozen without sugar added, though the Kedem has only 5g of sugars per serving. 36% of calories come from fat.
Make your own!! Also, it's really gross unless it's the un-sweet Russian version which you generally can't find in american kosher stores.
I grew up looking forward to passover mostly because of the gefilte fish, usually from a jar, but occasionally homemade. I can't eat them now because of the gluten though...I wonder of coconut flour could be subbed in for the matzoh meal? Anyway, the gluten would be my concern with homemade. If you come up with something gluten free, I'd love to hear about it!
