I'm interested in getting some ideas of what to do with fresh anchovies, as there's quite a few around at the moment.
I don't want to fry them (I avoid cooking with fat at high temperature). I'm looking for a recipe that gets them nicely cooked so I can eat them whole (bones and all) and as delicious as possible! My starting idea is to just grill them in the oven till they look ready, then douse in lemon juice and butter. Anything else I can do?
(they're quite small, by the way - about 5-6cm long and 1-2cm wide)
Hello!!i can tell you an Spanish recipe they serve in spanish bars as a tapa.First gut them and take the middle bone off, it is quite easy and split them in two fillets,put them in cold water as you go.When they are all clean put them in a tray skin side down in rows.
Mix 2 glasses of a white vinegar sherry is best and une of water and 2 teaspoons of salt and marinate them in the fridge for 24 hours.
Take out and wash in clod water and pat dry and now chop finely a garlic piece or two and a bunch of fresh parsley black pepper and if you fancy a cayenne chilli putt on top of the anchovies placed in a row skin down and cover well with a really good olive oil and you can eat it now and thy will keep in the fridge for a week or more ,i hope you like it!!!
Hello again,if you open them flat with no bones pass for flower and egg and fry them in olive oil with a garlic clove in it they are delicious after put a little lemon juice for eating them ,also you can eat cold in a sandwich,i also have a recipe for stuffed anchovies but maybe is no what you looking for.
Anchovies are a very delicate fish but the bone is quite hard to eat if you dont like to fry it i would not put it inthe oven and in Spain we eat them a lot but i never seen a recipe for oven anchovies.
