I have 2-3 pounds of ground llama and bison, elk. I need a quick recipe to throw together for dinner. I also have a can of pumpkin, tomato paste, spices, tomatoes, mushrooms, garlic and tomatoes canned. Any ideas? Has to be pleasing to an eleven year old, and two parents>???

Make a meatza! Use the meat patted down into a pizza shape and baked/drained, then top with a sauce made with the tomato paste, garlic, and spices. Top that with thinly sliced tomatoes, mushrooms, and par-boiled (thinly sliced) pumpkin and cook briefly in the oven. Another idea would be to make a meat stew with the meat, tomatoes, and mushrooms, par-cook the prepared pumpkin (cut the top off and remove seeds first), add the stew and bake until the pumpkin is cooked. It works like an edible bowl for serving- just park it in a real bowl to contain the juices when served. |

Make chili with the canned/fresh tomatoes (skin the tomatoes by soaking in hot water then peeling), tomato paste, mushroom, garlic and ground meat. Not sure what to do with the pumpkin - maybe a dessert of something? |

I've done a psuedo shepherd's pie with acorn squash in place of the mashed potatoes. Perhaps you can do the same with the pumpkin? |

Easiest ever: add salt, pepper, garlic salt, cayenne pepper to taste. Throw the meat in cabbage leaves and wrap like a burrito. Simple and cheap |

So saute the mushrooms in olive oil until they're quite browned, and then add the garlic and spices. When all fragrant, before the garlic burns, throw in the meat and cook until its where you want it, browned-wise. Drain the liquid from the canned tomatoes, if you want, and chop up very roughly, and throw in. Voila. I think if you try to work in the pumpkin, you'll only be messing with a good thing. |
