I'm currently interested in going paleo with my diet, but find it a bit challenging to put together a reasonable meal plan for the week - any recommendations or options I should explore for breakfast/lunch? I'm looking for relatively quick meals to put together as with dinner I usually have a lot more time to prepare.

Nell Stephenson also sells plans at various calorie levels. I haven't tried this, or seen reviews anywhere. I would love to find some simple plans at various calorie levels oriented towards busy professionals with limited time to hunt ingredients and cook. For me, being consistent with an appropriate energy intake is a tough thing when eating a real food diet. Always curious how other older adult, non-athletes solve this problem. |

On Sunday we usually cook up a slow cooker/Crock Pot full of some meat and vegetable goodness (e.g. chicken thighs, stifado (not that exact recipe but you get the idea), pot roast, etc.) and put it in the 'fridge. Every morning I pack some up for lunch. |

For the past couple of weeks (my first couple of weeks), I've been making up mini-quiches for breakfast (I'll whip up a batch Sunday night), and generally chowing on salads for lunch. Dinner is the most variable and experimental time. :) |

You can't get a faster meal than with fasting! :) I'll generally eat eggs, but if I'm tired of them (not usually) I'll just skip breakfast. I get free lunch at the office, but if they're serving something I can't make primal, I'll skip that too. |

I usually enjoy eggs with veggies and maybe a piece of fruit for breakfast, a big ass salad with meat and tons of veggies for lunch and dinner varies. I sometimes enjoy eggs again for dinner. And you may think meat with veggies gets boring but think of all the different meats you can eat... Cow, Pig, Chicken, Turkey, Goat, Bison, Fish, Seafood, Elk, Deer, Lamb, etc. These are just ANIMALS and all animals have several cuts. I love cow roasts, steak, ground beef... its never ending. When you ditch grains and get away from pasta, pizza, lasagna and more then your mind really opens up to a crazy amount of ideas. Oh and thanks for the mentions guys! We have a primal & paleo-friendly recipe blog. While its certainly not the end-all to the recipe websites in the paleo world, I think we do a good job of walking people through the steps to making things (including progress pictures). If for nothing else, its one among many you can consider visiting: www.primal-palate.com A standout breakfast idea on our site is the Egg Muffins. Its basically scrambled egg baked in muffin tins - allows you to get a nice protein punch first thing in the morning and start your day off right. You can make a bunch in advance, as they keep over a week in the refrigerator. Leftovers are quick and easy. Make extra when you make dinner - a lot extra! Then you can have several meals out of it. There is almost always some leftover steak/chicken/burgers in my fridge for quick eats. I often make a pot of meat chili and eat it for a week. I'm not a huge fan, but some recommend keeping hard boiled eggs around for snacks or quick on-the-go meals. If you like eggs, scrambled shouldn't take 10 minutes in the morning. I sometimes do a whey shake as mentioned above (sans fruit, since I'm diabetic). My breakfast is usually coffee with a lot of heavy cream in it. Which is only okay if you allow dairy. Nuts and cheese are pretty easy - although I try not to indulge in them too much. (Can't say I'm totally successful on that front!) |

For breakfast, I usually have eggs and turkey with either guacamole or avocado. If I'm really rushed, I throw a banana, 5 strawberries, 8 oz of almond milk, 1 scoop of whey protein and a few ice cubes in a blender. Delicious. For lunch, I usually have a salad; chicken, lettuce, onion, olive, bell pepper and instead of dressing, more avocado :) I guess that's not really fast, though, huh? I used to make my lunch the night before (cook a chicken breast or a steak or something like that) and then pack up some fruit in the morning to eat with it. I just started ordering salads at work recently, though. |
