Has anyone made sweet potato gnocchi? Could you do it without flour?

I eat sweet potatoes and this sounds like a good way to get a "pasta fix" if you were in the mood. If you mixed this with some good bacon I think it would be amazing. That is all.

I think you might be able to try it with sweet potato, coconut flour and eggs - not sure about the ratios, however...

If you wanted a lower-carb version you could also try it with some canned/mashed pumpkin instead of the sweet potatoes.

Just offhand I don't think it would work quite the same way - the texture of the cooked potato is quite different, and so I don't think it would hold together as well.

Having said that, it would be awesome if you tried it and it actually worked, and of course you reported back!
