I work as an EMT so I have to eat on He go alot. What kind of things do you all make that I can make at home and reheat in 5 minutes or less? I made paleo spaghetti the other night with plenty of leftovers.it all has to be food that will keep safe in a cooler I bring to work with me. Do any of you make some type of protein bar or snack bar?

Thanks for the help. New to this paleo eating. Trying to ease into it and gather tons of info. Plus m doing it to loose weight but add muscle. I workout regularly. Looking for ideas that might be lower in calories and fat than some things I've found.

Thanks

A.

I bring Hard Boiled Eggs and Pre-cooked frozen meat. Eggs have low prep time. Meat is 1:30 in microwave. Also the frozen meat acts like an ice pack for the rest of my meal. If there is a rest of the meal...

I had a similar experience for several years. When I was a cop I used to pack a cooler. I never ate in a restaurant unless they prepared the food in front of me (Chipotle, etc.) because some people don’t like police officers (imagine that!) and you never know who is cooking your food back in the kitchen. Sometimes I got a meal break and sometimes I didn't - if we were too busy, I ate in the patrol car or didn't get to eat at all during a shift. I generally tried to stick with foods that I could eat cold if I absolutely had to eat and couldn't make it to a microwave. I always worked the midnight watch and sometimes I got so tired that it made me nauseous, so eating became a moot point. But, some meal ideas are:

  • Grilled chicken breast on greens salad
  • Bunless hamburger with asparagus
  • Paleo chili (no beans of course)
  • Frittata with egg, sausage, beef, broccoli, spinach

I know that some of the paleo cookbooks would have great ideas for grab and go food. I don’t have it yet, but I’ve heard good things about Melissa Joulwan’s cookbook. You can purchase it in print or as an e-book at http://www.theclothesmakethegirl.com/

Good luck and thanks for the work you do.

Keep seeing alot about paleo chili. I'm going to check this out. Searching........ – Andy Mar 9 2012 at 17:46
It's one of my frequent dishes. Easy to prepare, keeps well, tastes great. I make it about once per week. – Ralph Furley Mar 10 2012 at 0:10
Pretty much any chili recipe will work. Just exclude the beans and be careful with the seasoning - some of the chili seasoning packets have wheat in them. – Ralph Furley Mar 10 2012 at 0:11

I've worked as a medic for the last 23 years. When I was fat, I ate restaurant food and fast food a lot. For the last half of that, I've simply taken a cooler to work packed with 5 meals per day. Usually my eggs, ham and cheese are in one little baggie. My 5 or 6 pieces of beef are in another. My green vegetables are in another. If it has to be eaten cold then that's how I do it. Usually though, I heat it up in the station using the microwave or the stove.

Nothing to it.

You can also pack nuts/seeds/fruit, beef jerky, etc...

Nuts seeds and jerky are a great idea. You could even eat those while driving to a call if you had to. – Ralph Furley Mar 9 2012 at 12:56
I try an pack a cooler with enough food too. Usually I do alright. Its good to see a fellow EMS worker that is hip to the struggle. – Andy Mar 9 2012 at 17:46
Thanks for your service as well. – Andy Mar 9 2012 at 17:47

  • Soups, stews and chilis.
  • Chicken or beef casseroles.
  • Sandwiches on Romaine lettuce wraps or flax or almond meal bread.

Easy protein bar: Mix your favorite nut butter with protein powder until the mixture is stiff enough to form into bars or balls without getting your fingers messy. Add nuts, seeds and dried fruit if desired. Roll it in crushed nuts, more protein powder or almond meal if you like.

Definitely like these ideas. Good for a few days worth of meals. – Andy Mar 9 2012 at 17:44

Hard boiled eggs and avocados are a major go tos for me. And you can always carry a jar of coconut oil or grassfed butter to add calories to practically anything.

Roast tri-tip salad. Easy, filling, clean to eat if you don't need dressing. Crumble some bacon on there, too.

These are delicious and easy to make. I'll second, third or fourth hard boiled eggs and pre-cooked chicken breasts. That's my go-to breakfast on most days in the car, and it works great.

Also, this isn't your question, but don't be afraid of fat! It seems scary (did to me, too), especially coming from CW, but it's an efficient source of energy and a good way to add bulk and satiation to small, quick meals.
