Prior to my Paleo switch I would get never get hunger pain in my gut, rather if I skipped a meal my head would ache so strongly that I would have to take pain meds to suppress it, but barely better at all.

Now, I never get headaches, especially headaches from not eating.

Can someone explain in detail what was going on in my body before changing my diet that the result of skipping a meal was causing eye-watering headaches, but not so much belly "hunger"?

I expect that was to do with your blood sugar level; your new diet is likely to be keeping your blood sugar level a lot more stable
