A little info first.
Please be kind about this I am not a paleo expert...
I have an issue with losing weight, unless I am extremely low calorie 700 to 500 calories a day, I cant loose weight, no matter how hard I try. I have tried all I can, very low carb, high fat, medium fat intake, no caffine, added caffine, high cardio, little cardio, walking, standing at my computer. I use only 1 table spoon of coconut oil a day, I have cream (4oz only) in my coffee when I am drinking it. I am eating low carb so that is not the issue.
I had lost over 105 lbs and last summer I hit my all time low of 155 I was feeling great but I lost most of it by eating very low calorie, then over the winter I gained 17 lbs back eating still healthy but around 1500 calories, and now I cant get rid of them. I know an increase in calories can make a person gain, but I dont understand why I cant lose eating 1500 to 1200 calories, why only if I eat 700 to 500? Its no way to live. :(
The two things I can't do are heavy lifting (straining) and sprinting (impact) but I walk slow and speed walk everyday in intervals for about 30 minutes. I am IFing about 18 hours 3 times a week.
I will start swimming this summer, and riding my bike more. I have a tight budget and training restrictions so I am limited.
Any ideas of why this is happening to me?

I am 5.4 and at the moment 173lbs and most of it is body fat.
Fit-day over a 2 month period. while eating about 700 to 1000 calories a day:
Fat(64%)
Carbs(2%)
Protein(34%)
When I am low calorie I eat:
Breakfast 1 or 2 eggs cooked in a tsp of butter or coconut oil
Dinner/lunch half a chicken breast and half cup of vegetables
Sometimes I would have 2 cups of coffee with 2 to 4 oz of cream (that means 1 or 2 oz per cup).
When I am eating "normally":
Breakfast:

3 eggs cooked in 1 tablespoon of coconut oil with a half cup of frozen cubed kale.
Snack 12 olives
Lunch:
Baked pork-chop and baked sweet potato (only 2 or 3 times a week) butter.
snack small (palm sized) amount of wallnuts
Dinner:
Baked chicken breast and cup of broccoli
Every third day I would have 2 dried figs or 3 dried plums. as a treat.
