So over the lest couple weeks of doing this whole Paleo thing, I've made an observation.. When I eat a decent breakfast (like 2 of these egg muffins), and have a salad for lunch I still feel ravenous throughout the day. However, eating 2 muffins for breakfast, and 2 for lunch leaves me much more satiated than the salad.
I'm worried that just eating the muffins isn't providing me with enough veggies. When I have a salad, it's usually some leftover protein (chicken, or whatever), a small amount of onion/peppers/carrots/etc, and a bunch of baby spinach or romaine lettuce.
Is the salad enough? Should I just stick with the muffins and make up for the veggies later?
I'm afraid if I keep starving at work, I'm going to grab something "bad" to much on, and I really don't want to!
A big part of paleo is eating to satiety, so if you're starving, there are changes to be made. If you want to keep the salad, add more protein and fat to it (bigger portions of proteins + avocado or olive oil) to keep you full. Or you could throw a bag of frozen veggies in with the egg muffins and throw it in the microwave at work.
Do you heat the egg muffins up before you eat them? I know that is random, but there was a study done and people fell more satiated when they had a hot meal than a cold meal. Could you add maybe a small veggie/beef broth soup to your meal and maybe you would feel a little more full without a lot of extra calories? Just an idea.
