So over the lest couple weeks of doing this whole Paleo thing, I've made an observation.. When I eat a decent breakfast (like 2 of these egg muffins), and have a salad for lunch I still feel ravenous throughout the day. However, eating 2 muffins for breakfast, and 2 for lunch leaves me much more satiated than the salad.
I'm worried that just eating the muffins isn't providing me with enough veggies. When I have a salad, it's usually some leftover protein (chicken, or whatever), a small amount of onion/peppers/carrots/etc, and a bunch of baby spinach or romaine lettuce.
Is the salad enough? Should I just stick with the muffins and make up for the veggies later?
I'm afraid if I keep starving at work, I'm going to grab something "bad" to much on, and I really don't want to!
