I just cooked up some rainbow swiss chard by taking a slice of bacon and frying it in the pot first and then throwing the shredded chard in after it letting the steam and heat from the bacon grease coat and wilt the greens. Veggies are made better with fat and if you are living without butter, bacon grease is one go to.

What are some of your favorite ways/recipes to use bacon?

One word: Lardons!! Basically fried cubes of bacon fat - of French culinary origin - SO flavorful. Adds a lot of dimension to dishes like coq au vin OR just a plain ol' salad.

Someone brought a delicious appetizer to one of our paleo parties once: Dates, stuffed with a pecan, and wrapped in bacon - then sauteed to cook the bacon.

They were unreal.

Yeah, I've seen those variations but have not tried them! I definitely dig goat cheese, so I may have to give that one a shot. I suspect it would provide a nice (somewhat) salty counterpoint to the date. Mmmmm. – The Food Lovers Sep 22 2010 at 13:30

Bacon adds some flavor to a Mexican-style seafood soup my mother makes that I have adapted to be paleo-esque. Cabbage, carrot, zucchini, onion, jalapeno (I leave the veins and seeds in for the kick), a bit of garlic, celery, and tomato are chopped and sauteed in bacon fat.

You then add the bacon fat sauteed veggies to a stock pot of chicken broth (or beef or pork) add oregano, pepper, and a can of a spicy tomato sauce available in California called Pato Sauce. Allow to simmer. Add shrimp, fish, other shellfish and cook briefly.

A spicy seafood soup, that bacon fat brings together. Serve with wedges of lime.

Bacon Salad Dressing

Another hack from the lunch I am eating right now-

  • Fry a few strips of bacon - I used 3.

  • Reserve grease.

  • Mix grease with a bit of balsamic vinegar, finely chopped clove of garlic, a dash of honey (if you want/can handle/are ok with its use), salt and pepper--stir is up, shake it up. (Proportions are probably 2:1 grease to vinegar.)

  • Fill a bowl with salad greens, some sliced carrots, top with bacon, pour over the bacon balsamic salad dressing.

The warm dressing will wilt the greens a little which I like for digestive aid.

My favorite way to eat bacon is to just eat bacon. Slightly cooked of course.

I like to make small chicken breasts on the grill wrapped in bacon. '

Heat the grill up to medium heat so that it is nice and hot when you put the chicken on. Then Take any high quality bacon and wrap it around your favorite chicken breasts. Put the chicken on a plate and let it rest for 2 minutes and then enjoy!

Another favorite i make along side this is just grilled bacon which is amazing in it's own right. I just can't believe the flavor.

Bacon is really delicious with fruits:

Fried bacon and (cold) cantaloupe

Fried bacon and some fried fruits (apple, pear, banana are great) (bonus: add shredded coconut and some nuts)

Of course it depends on the amount of fruit and carbs you want to eat.

A new favourite of mine is to take just the eye part and "jerk" it in the food dehydrator. The result is a crispy "chip" substitute about dorrito size and shape. Perfect crunchy snack.

cook bacon... take it out and crumble it up.. add whatever you want to the pan and cook it in the bacon fat. serve with crumbled bacon on top.

My 'bacon hacks':

Wrap any meat in bacon, and cook - grilling preferred.

Wrap any seafood in bacon, and cook - grilling preferred.

Wrap any veggie in bacon, and cook - grilling/roasting preferred.

Sensing a pattern?

Beyond that, my meals at the moment all tend to be meat & veg chucked in a frying pan with fat, and whenever it's bacon's turn in the pan, it's extra delicious! Had a sauté of bacon, button squash, mushrooms, and silverbeet in butter this morning :D

I'm also still crazy about living my pans with bacon first before making frittata/crustless quiche - I won't have them any other way these days!

I also like to crisp up bacon to crumble in soups and salads. Mmmmm...

I've also made lasagna where strips of bacon served as the 'pasta' >:-D That one was eaten far too quickly - no time for photos! I guess I'll just have to make it again...

Bacon Omelette

Fry the Bacon, set aside with grease still in pan, fry omelette, reinsert bacon

Wipe drool from side of mouth, enjoy

I bake mine at 250 for 1.5 hours and save the rendered fat. It goes into every dish I can put it into. :)

I also cut it into lardons, fry them and make a warm spinach salad with goat cheese and walmuts.

My favorite bacon recipe is Bacon/Broccoli soup:

4 cups chopped broccoli
2 cups beef broth
0.5 cup bacon grease
4 tblsp sweet potato flour
1 lb (before cooking) grassfed bacon
1 can condensed mushroom soup
1 can coconut milk

bake bacon, reserve grease
steam broccoli in broth until desired consistency (I prefer soft)
combine grease in soup pan with flour, blend well
slowly add coconut milk while whisking, then mushroom soup
add broccoli and broth, mix well, then mince and add bacon

While I'm making anything with bacon, I wear my shirt that says: BaconStrips&

I can't stop dry rubbing porkloin with cumin, garlic powder, and whatever else sounds good and then wrapping the entire thing in bacon and baking.

I usually finish it off when it nears done by broiling so the bacon gets more crisp.

Yum.

My coworker can't stand the thought of warm pig wrapped in warm pig. I told her she's missing out.
