I agree with gismcieri and Crystal. Just eat Paleo...you'll notice you don't have to "kill" yourself and your time with workouts.
I do P90X on and off throughout the month to mix up my workouts, but I've slowly migrated toward the Mark Sisson Camp of more Primal style workouts - hit it hard and fast for 30 minutes MAX (most are 15-20). With that, I don't have to rely too much on the need for starch. Burning fat is fine.
Bump up the fat (GOOD meat fat/skin...meaning grass fed/finished meats to avoid the crap that can build up in the fat from production meats), oils, butter - yes, good raw butter is good too, even though you don't like it.
At the end of the day, you have to ask yourself WHAT DO YOU WANT TO ACCOMPLISH?? Even Tony says after the 90 days, take a break. From the "primal" perspective, would any of our ancestors being "taking a break" from the day to day necessities of putting food on the table, etc? This way of eating and "training" is a lifestyle, right? - referring to the Paleo or Primal lifestyle ...not a short term solution for the summer bikini, speedo (I'm NOT saying this is you). Just throwing a two cent perspective.
With that said, I do think more starch with the P90X routine may be necessary as you're pushing 60 minutes with some of the routines.
It all goes back to what you're after? Size? leaning out? strength? endurance? Or, do you just want to look good in the sack? Enjoy life, family, and yourself!
Good luck!

Paleo for 4 months, then 95% for the past year. I'll do a bit of dairy (raw butter or cheese on occasion). NO grains. Lost 20 lbs, no more gas, digestion issues, better attitude, allergies virtually GONE.
