After having a POLIQUIN BIOSIGNATURE MODULATION (http://www.charlespoliquin.com/AboutUs/Overview.aspx) test my trainer has recommended me to go PALEO alongside my training routine to reduce body fat and increase general health
1 week before i started Paleo i was measured at 19.5% Body Fat, Weight 74.5kg, height 5'6
My trainer has asked me to go complete Paleo for 14 days straight but on the 14th day have a meal that has carbs ie Gluten free pizza to shock the body. I must repeat this formula till i get down to around 10% Body Fat and once i have attained that i may incorporate a full day.
What are your thoughts on such a regime???
So I'm into day 10 of that 14days and have started to sneeze repetitively but other than that i'm feeling really good like my body is starting to mend itself after all the years of bad food intake....
Is this flu like symptom normal??

I guess it could work.
What also works is eating quality whole foods and incorporating a solid fitness routine. You don't need to "shock" your system to lose weight. I understand there are different "protocols" out there for triggering different hormonal cascades that may lead to quicker weightloss, but eating a gluten free pizza after 14 days sounds like rubbish to me.
The whole point of consuming food is to nourish your body.
It sounds like your trainer suggested you "go low carb paleo" - carbohydrates are certainly not forbidden under even dogmatic, puritanical Paleo. While paleo types can expect to eat way less processed carbohydrate based crap than the average SAD eater, paleo is not by definition "low carb" -- "lower carb than people who eat crap", maybe.
If I can guess what kind of "shock" your trainer is looking for, instead of a pizza, may I suggest eating an abundance of extremely carbohydrate dense vegetables, and avoid the processed flour -- gluten free or not -- entirely. Sweet potatoes, yams (nah-yeh-meh / "name"), and cassava come to mind.
For myself, I alternate "normal" carbohydrate on rest days (40-100g), and I load up on workout days (100g-175g) -- I have a 5wo/2rest weekly shtick. It works fantastically for me; YMMV.
The "carb flu" you mention is known to paleo types, but is not something that happened to everyone. Again, YMMV.

I had a similar flu problem with Paleo when i 1st started.
I looked like a man with hay fever and flu.
For me it was a mix of salmon and nuts (probably omega 6 fats). I did a Robb Wolf esk 30days without and re-added a small amount of nuts and an avocado a day.
If i over do the nuts i get a small reaction, however its much less of a problem and lasts a shorter time.
