I usually use canned wild pink salmon with oatmeal as a filler... Since oatmeal is out, any other ideas? TIA.

Most paleohackers will recommend almond or coconut flour as breading/flour replacements. Almond flour works well, but just like almonds (or almond butter) it is high in n6. If you find that you are using a lot of it, that's probably not good. Coconut flour should work, but I haven't tried it myself. My wife uses crushed pork rinds in my meatloaf and breaded things (like chicken cutlets). It works really well and adds a hint of a bacon-y flavor - which may or may not pair well with the salmon, depending on your taste. – Dave S. Apr 3 2012 at 13:39

I've made this one. It doesn't really have any kind of flour filler but still comes out nice. A bit too eggy perhaps but that may have been about me being lazy on the mixing.

Almond meal/flour works as well. Adds a nice nuttiness to it.

You could use frozen, chopped spinach, egg and a little coconut flour! Mix it all together (with the salmon, of course), maybe some fresh lemon/lime, dill (any other seasonsings you like on fish) form the patties and fry in some coconut oil! Yum!

I just use eggs? But the texture is not like a true fishcake, more like a fishy omelette. You could try some tapioca starch or coconut flour. Be aware that coconut flour is a real moisture sucker upper, so you need very little.

For binding the salmon and egg (and vegetables), I use potato flour. Mashed potato makes a good filler.

I wonder if riced/mashed cauliflower + egg would work? I would think that some sort of paleo flour (almond/coconut) would be better, but this might be worth a shot.

I use a bit of mashed sweet potato (the sweetness is delicious), egg, mustard, lemon, and almond flour. It acts like more of a cake this way I find!
