Are there any health differences between these rices? I want to start eating more carbs and am wondering what rice is good to eat.

I would say: look for inspiration in people who traditionally eat rice. And look for the traditional, not modernized, version. This approach never failed me :-) |

maybe risotto rice? because it can be enhanced by veggies/protein galore and super creamy naturally! For some reason I can digest risotto rice better than regular rice, but both are a chore on my system. |

Rice pilaf. Basically, rice cooked in soup/broth. I especially like it cooked in my chicken broth. Yum. |

Steamed or boiled seems best. Pudding introduces something sugary, fried introduces potentially oxidized fat. And while I'm not so sure about this, I think wild rice might be more like brown, in that it has more of the outer seed bits that brown rice has, where the anti-nutrients supposedly reside. Having said that, I don't obsess too much about these things. I make fried rice occassionally, a fun and tasty way to use leftover boiled rice that can easily take on Chinese, Thai, or Indian flavors, and more. Definitely consider risotto--a fabulous way to get some Italian back in your life, if you miss pasta. |

well rice pudding is gonna have sugar in it so i would stay away from that. it really depends on yr body and how you tolerate carbs and fats together, i personally would go for plain rice over fried rice because unless im low low carb i can't eat a lot of fat without gaining. ymmv. |
