I'm kinda bored right now and hungry as I looked through our fridge and realize nothing is really calling my name. I am tired of eating greens and meat for breakfast and dinner. I have plenty of ingredients in the fridge what do you guys suggest I cook up? What's your fav breakfast meal? Ps- Im watching the nuts right now.

I have scrambled eggs with cheese and Tobasco with a side of blueberries most mornings (and coffee - gib mi dat kofee naow!). I was watching my nuts earlier today as well. Have some leftovers, anything paleo or IF. Don't you know that boring is good? Stop entertaining yourself with food (Harris/Guyenet). It's funny how you suggested scrambled eggs with cheese and Tobasco and wrote that anything paleo is good. I didn't know cheese or Tobasco were paleo? Atkins, yes. Paleo? That's a hard sell. – foreveryoung Apr 7 2012 at 3:27

Try chocolate pudding. To make it:

4 raw egg yolks in a bowl, mix well. Add glob of macademia nut butter. Mix. Add few tbsp of 100% cocoa powder. Mix.

Sometimes I eat it at that stage. Most people would require that some kind of sweetener (coconut sugar? honey?) be added, unless they are already dark chocolate addicts.

I sometimes add half a cup of blueberries, or other berries. Or a bit of shredded coconut, or... well, whatever. If I want the pudding to be more runny and less stiff, I'll add a bit of coconut oil. There are all kinds of ways to vary this. Just start with egg yolks, add cocoa, and whatever other ingredients you want.

It's very filling and feels like a huge treat to me. :-)

I'm sure you could replace the macademia nut butter with something else. Coconut butter, maybe? I sometimes add that. So good!

i just downed 6 scrambled eggs, 2 small sweet potatoes mashed with a banana, coconut oil and 100% cacao. it was as great as it sounds

MM.. sometimes I think it's just looking at the same components in a different way. Eggs, mushrooms, kale. You can: Scramble. Make an omelet. Keep separate on the plate. Treat as a salad with a few other tasty bits. Example: I made this last week, kind of a play on eggs benedict using the above ingredients.

Typically I have two large meals a day and maybe I'm really jamming on steak and will make a couple different things: steak hash, sear it and have with roasted veggies, make a big breakfast salad with fresh spinach, avocado, tomato, egg, et al. Do you like chicken sausages? There are some great organic ones with minimal ingredients - split the casing and make a sausage patty and top with a poached egg and some roasted sweet potato. Also - baked eggs also known as Eggs in Purgatory rules.

avocados are simply and a mainstay for me. Make a nice rich tomato sauce and poach a few eggs in it, dish out and enjoy. I usuall skip breakfast and eat about four or five hours after getting up but the options are the same. Most countries do not eat the eggs and bacon rountine- Id google countries like Greece, Turkey, Spain and Poland and see what they do. The tomato sauce with eggs is very isreal, turkish. Good luck

I just had a slice of bacon quiche... I know it's not "Paleo", but it's really tasty and keeps me feeling full until lunch time. My quiche has the following ingredients:

  • 1lb Maple Smoked Bacon
  • 1 1/4c Heavy Cream
  • 1/2 tsp Nutmeg
  • 1/2 tsp White Pepper
  • 1/2 tsp Sea Salt
  • 4oz chopped Gruyère Cheese
  • 2 eggs
  • 2 egg yolks

I seem to do better with high-fat in the morning. I'd like to figure out how to easily make the quiche crustless or at least with a healthier crust. I usually eat a 1/5 slice.

Other favorites include Turkey & Avocado Omelettes with Salsa, diced grilled chicken, or meatballs.

right now i'm eating sauteed leeks, collards, and swiss chard with two eggs scrambled in - topped with dulse and a side of sauerkraut. cooked in coconut oil, of course!

i agree that the meat and greens thing gets old but, for me, the dulse and sauerkraut, which is a recent addition to breakfast, gives it a nice kick. kinda my new thing...toppings/sides/flavors added to the basics.

i hope that inspires.

I'm rather fond of taking leftover meat chopped into little chunks, and frying it with diced rutabaga for a sort of lower-carb "hash". Then I fry an egg and put it on top. If you eat more carbs, I suggest sweet potatoes instead of the rutabaga... but rutabagas (Swedes or Neeps to you UK folks) are fantastic, quite potato-like, yet have a low carb impact - to this day I don't understand the cauliflower starch-replacement recipes when rutabaga works almost exactly the same as a firm waxy potato (and they last forever in your fridge!).

If I have smoked salmon, I like a spinach salad lightly dressed with balsamic vinegar, smoked salmon and bacon, capers and chopped avocado with red onions (if I'm working from home, if going into the office I'll skip the onion).

Not eating "morning" breakfast lately, but rather around traditional lunch time. However, when I was, I would drink 3 eggs, with a dash of pepper. Quick, easy, and tasty. Everyday.

I love eating left over. Today was paleo chicken tikka masala!!! Sometimes its eggs, that's my go to! Eggs, spinach, bacon, and chicken!

I usually just drink a small glass of milk kefir for breakfast, followed by coffee with heavy cream, and wait to eat later in the day when I'm fully awake and functional. :) I never have liked breakfast much.

Most mornings it's a frittata with sautéed greens, tomato and cheese, cooked in butter, or Paleo pancakes made with almond meal instead of almond butter with some berries on top.. but I like a big salad too sometimes...

Fav breakfast: beef rib (prime rib bone) oven baked for about 35 mins at 350, and a couple of runny eggs.

Training Days - 2 Eggs, Medium sweet potato, black coffee with coconut cream

Non training days - 4 eggs, leftover meat (beef, salmon, tuna etc), black coffee with coconut cream

Boring but simple, tasty and work a treat!

I totally understand your problem, sometimes I feel the same way. Why don't you make paleo pancakes with blueberries, strawberries or self-made apple sauce? Or eat melon with bacon, dates with bacon or eat eggs (scrambled or however you like it) and make a fruit-vegetable shake afterwards - you can mix whatever you like, just try it.
