LAMB. That is the only reason Easter is celebrated in my atheist family. Two whole lambs on a spit all day, all guests bring a bottle of wine and a salad, then FEAST. |

A leg of Lamb roasted in garlic and rosemary with potatoes, carrots and parsnips roasted in beef dripping (tallow to you Amerkins) and a boiled vegetable medley of broccoli, cauliflower and peas :) all covered in a home made gravy made with the juices from the lamb, stock and thickened with potato starch. Can. Not. Wait. |

I gave up and bought a brown sugar glazed ham and a SAD chocolate cake for my family. They think I'm the abominable snowman when it comes to food, and I'm so fed up I'm kind of taking a sick passive aggressive pleasure in giving them a taste of their medicine. As it were. I'll be eating leftovers from the pasture fed beef and beef liver stew I made today. And probably having some tequila. |

Beef, standing rib. Sweet potatos, carrots, prolly some kind of bread from someone in the family. Green salad. Basic, easy, non-confrontational. |

Actually had lamb tonight and tomorrow am grilling some huge steaks. Easter is a bit of a non-event for my family to say the least. |

We had a beautiful tbone dinner tonight with scallops, sweet potato hash and sauteed mushrooms and sundried tomatoes with some organic wine. Tomorrow will be a slow roasted prime rib followed by coconut milk ice cream and chocolate coconut butter cups. Yum! |

I made coffee and these for brunch, but used cardamom, pistachios, and orange zest in place of the raisins, cinnamon, and pecans: http://urbanposer.blogspot.com/2012/04/best-almond-flour-cinnamon-rolls-paleo.html (They were amazing.) My mom used to make orange sticky rolls on Easter so I had to do something at least similar. For dinner we're having herbed leg of lamb (mint, thyme, garlic, onion, parsley, red wine vinegar, olive oil), roasted potatoes, and an arugula salad. Dessert is strawberries with a little unsweetened whipped cream, I think. Breaking out a bottle of wine to go with. |

We have a beef roast in the oven right now. It smells so good I could gnaw on it half-raw right now. For sides, I'll be making a sweet potato/butternut squash casserole, bacon wrapped asparagus, deviled eggs, early spring green salad from the garden, and strawberries and cream for dessert. I'm salivating already. |

I'm cheerfully eating ham and sweet potato. I did give the ham a good wash and I'm slow-cooking it in fresh water but Easter is one of the major holidays on which I have no rules. And, of course, I will have a large leafy salad as well. |

Braised beef stew - simple recipe of cubed beef shoulder, chicken broth, mirepoix, apple cider vinegar and unique spices (cardamom, cumin, nutmeg, salt/pepper) For sides, my wife is having roasted red potatoes and my son will be having homemade fries cooked in coconut oil. I'll fry up some rutabaga home fries to eat with mine. |
