Haven't heard much about his opinion on wheat/gluten? Does he see it as benign?

He does not see it as benign : it has quite some PUFAs, it's starch (Ray Peat doesn't like starch at all), some people are sensitive to gluten, and it also has quite some iron. In fact Ray Peat only likes fruits, the other plants don't interest him (except for the daily raw carrot). Only plants that have been cooked for very long are okay, like in bone broth to get minerals. – Bruno Apr 8 2012 at 12:29
I think you are incorrect in stating that Peat doesn't like any starches. I think he has a favorable view of white rice and, to some extent, potatoes. – mmartian Apr 8 2012 at 17:58
Not at all. Did you ever listen to East West Healing podcasts? He's not against potatoes and rice, but says they can feed bacteria and that they have to be cooked for at least 40 minutes. Whenever the subject is starch you can tell he's not a big fan of it. The diet he personally eats has practically no starch (he drink OJ, coke, milk and eats fruit). – Bruno Apr 9 2012 at 7:29

he says the gluten is linked to skin problems and is a gut irritant. If you have a really high metabolism and superb digestion he thinks you could get away with eating it moderately.
