I went to a restaurant with family and tried my best to steer clear of gluten containing products. As anyone who is Celiac knows, cross-contamination can be a real biotch.

Long story short: I am bloated, gassy, have a mouthful of canker sores and a pounding headache.

Any ideas on the best macros or specific foods that might help my body and gut heal most quickly? Shoud I be taking some form of good bacterias to reintroduce what was probably lost?

Some things I turn to: probiotics, fermented foods like sauerkraut, bone broth, plenty of clean water. Helpful supplements could include L-glutamine, chlorophylls, digestive enzymes until you're feeling better.

Kombucha helps me- which has enzymes and probiotics.

bromelain is the best take for glutening as it is known. if you can take a few either before and iffy meal or after it really reduces the effects. Also things like aloe and bentonite clay help calm your system down.

I go with a water fast for about 24 hours or until my main symptoms (IBS) subside.

Back in the day I used to take a ton of capsules comprised of psyllium husks with acidophilus (Vitamin Shoppe makes them) and it helped, but not as much a fast does.

I'm with you Joshua, nothing works better for me than a fast. And since I don't feel like eating anything anyway, it works well for me. (FYI: IHOP's omelets are possessed with tiny gluten devils! Supposedly makes them "fluffier". I don't know whatever possessed me...). – HeatherN1321 Apr 10 2012 at 1:08
