Banana muffins or pancakes-Basic batter recipe:
2 eggs, 2 small bananas, 1/2 teaspoon baking soda, 1 tsp apple cider vinegar, and 1 cup almond butter (or cashew butter). Blend em somehow. If you have a strong blender, you can do it in there. Other things you can add if you like: dark chocolate chips, 1 teaspoon vanilla, stevia (stevia doesn't really seem to add much though)
I have actually tried this without the baking soda and vinegar and it is fine but more dense and less fluffy. The vinegar activates the baking soda and the baking soda makes it puff up more.
To cook it, you can either make it into pancakes or you can put batter into 12 muffin cups. Better grease the cups first though. For muffins, I bake at 400F until toothpick comes out clean and tops are slightly golden. I think that is about 20 minutes, but don't remember exactly. This would also probably work as a banana bread type loaf, but haven't tried that yet.
Sometimes I get an urge for a heap of butter on bread, and this is the 'bread' I use for that. I call it a frankenfood as it is more processed and nuts are a 'seed' But you can make it relatively paleo if you just do banana, egg, and nut butter only and go for a more dense product.
