Brussels sprouts - halved, tossed in olive oil and S+P, roasted. Cauliflower - steamed, roasted. Cabbage - sautéed, roasted, raw. Broccoli - sautéed, steamed, roasted. Kale - sautéed with lemon juice and butter (especially good when 1/2 kale 1/2 cabbage), baked (kale chips). Rock on, cruciferous vegetables. I love you so much that I'm almost sorry I have to eat you. |

I have to say beets (Dwight Schrute would love me). Both the root and the greens. I love them roasted, but nothing beats (har har) a salad of beet greens with pickled beets on top. |

I Love kale - any way you prepare it! I love baked cauliflower I love broccoli - any way except raw OK I could go on for days and days. I Love Vegetables especially if they're cooked in lard (beef, pork or duck mmmmmmmmm) |

I adore carrots. In fact I like carrots so much I'm surprised they are good for me. My favorite way to eat them? I like them straight out of the my own organic garden, raw and unpeeled. Steaming up baby carrots with some Ghee or Coconut oil is also a possibility if I want to get fancy about it. |

Kale is one of my favorites as well! I'm loving kale chips (coat lightly with olive oil and salt, bake @350 until crisp...20 min?), but I also love it raw added to a salad. I bet it would be good as a burger topping, too...mmm, I might try that tonight! I also love squashes:

Each week I buy a bag of organic frozen spinach (chopped) and a bag of organic broccoli crowns. I eat those with some sort of meat at lunch and add an olive oil/vinegar/mustard dressing over the top. It's delish and helps me get some greens. I don't really do veggies unless they are super simple and preferably mixed up in something. I know my weakness and try to address it this way. |
