During the weekend, I eat a very wide variety of plants, but during the week, I mostly just saute a few handfuls of greens in the pan I just cooked my meat in for lunch/dinner. Is this unhealthy? I eat kale, spinach, swiss chard, mustard greens, collard greens, cabbage, various lettuces and microgreens. It's simple and I feel great, but am I missing something? Do I really need to "eat the colors of the rainbow" every day? For the record, I do eat beef liver once or twice a week, and I do eat fruit and other colorful vegetables on weekends.

Are you asking this because you're wondering if you're missing anything micronutrient-wise? You sound like you get enough vitamins/minerals. I only eat as many different veggies as I do to make my meals more interesting. If you're not deficient in anything, you probably don't need to "taste the rainbow." – April S. Apr 23 2012 at 19:41

Short answer: no. Liver is nature's multivitamin! I would be more worried about making sure you get adequate soluble fiber to support gut flora health than anything, but it sounds like you're doing that.

I think if you look at online nutrition profiles you'll be surprised to find that plants really don't have that much vitamin or nutrient content.

it just sounds like you need to relax a bit. you said you feel great so feel great and don't stress yourself out. take a step back and realize how far ahead of the curve you are just by simply eating a paleo diet.

What you're doing sounds good. Just don't actually "taste the rainbow," a la Skittles.
