I have a pork belly sitting in the fridge and I will be making my own bacon soon but in the mean time I will be buying from the store. I only buy the bacon with cultured celery extract instead of the ones with sodium nitrate in them. Which bacon has more nitrates in it? The one with the celery extract(naturally occuring nitrates) or the pure sodium nitrate? Which one would I be better off buying? The bacon I buy is about $5.99 Canadian, and I can get regular bacon for $1.99 so if the regular kind is better I would buy that instead.

I'm willing to wager there's not a whole lot of difference between the two. I'd be more interested in the quality of the meat rather than the details of the cure.

I just read in the WP foundation's Spring issue a letter that stated that bacon made with celery salt has more nitrate in it. Not sure if it is online, check their website or get the spring issue of Wise Traditions. It is in the letters section.

I get Wellshire Farms bacon bits and pieces, as it's cheaper than the sliced bacon. I prefer to make sure it's celery extract, rather than pure sodium nitrate.

Applegate Farms Sunday Bacon is excellent! No nitrates/nitrites, organic, gluten and casein free. Also, delicious.

It has nitrites if it has celery anything in it. Even if the label says it doesn't have nitrites. Legally they can say there are no nitrites even if there are nitrites from celery stuff, even if its more nitrites (usually is) than if normal nitrites were used. – wildwabbit Apr 27 2012 at 1:58
