I'm new to the Paleo diet and I'm getting ready to bake blueberry muffins! I have everything except for the Arrowroot flour... Can I ommit it and use something else? Or add more of something else?

Seeing the actual recipe would help to give a solid answer but that being said you can definitely sub rice or potato flour. You could do coconut flour as well but that is a tricky one as a small bit goes a long way.

If it helps, I have friends who have made these blueberry muffins and love 'em. Maybe you can compare to yours and it will help with some subbing:
1 cup almond butter
1 cup almond meal/almond flour
3 eggs, whisked
1/2 cup honey
1/3 cup shredded coconut
1/3 cup melted coconut oil
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon sea salt
pinch of cinnamon
1/2 cup fresh blueberries
Preheat your oven to 350 degrees.
Mix all ingredients together in a bowl. Mix everything together. Gently fold the blueberries in at the end.
Place ingredients into 8-10 paper or foil muffin liners in a muffin tin.
Bake for 15-20 minutes. Keep an eye on them - will puff but may not get much colour.. I've noticed that with much of my Paleo baked goods.
Arrowroot is extremely tacky when mixed with water. Reminds me of making tapioca to play with when I was a child.
I usually add it to sauces and faux-breads as a thickening agent. You may want to give chia seeds a whirl -- they are not as tacky when mixed with water, but do get thick and snotty. I know, yummm, right? ;-)
Every so often, I make faux-crepes that are basically cassava, arrowroot, and egg. They are bland, but make great taco shells, when lettuce leaves won't quite cut it.
Depends on your recipe, but usually it can be omitted with both coconut flour and almond flour muffin recipes. The arrowroot just gives a more fluffy and cakey texture. As long as its only a small amount called for, say less than a couple tablespoons, you will be fine. Possibly may need slightly less liquid.
