I just put some carrots, brine and some powdered ginger (which has SO2 in it) i had in the cupboard into a mason jar for fermentation. I also put a little bit of sauerkraut juice into it for starter.

my question:

Will the sulfur dioxide screw up my ferment?

Sulfur dioxide is a preservative, so yeah, it's quite possibly going to screw up a ferment. Or at least slow it down quite a bit.
