What are the best recipes that you have made and tried and would make it again? I have never really eaten pancakes, very rarely, but all of a sudden I have had this immense craving for some this week(probably from looking at pictures of "paleo pancakes" drizzled in maple syup lol).So share with me some of your secret pancake recipes, and also anyone know how to make a good poundcake bread(not sweet) with coconut flour? Its okay if the recipe calls for a little almond flour, because I'm getting some in a few days.

Some of the best pancakes I've ever eaten (paleo or not) are from PaleOMG's blog - specifically Carrot Cake Pancakes. They do have both almond and coconut flour in them. http://paleomg.com/paleo-carrot-cake-pancakes/ Seriously. Eat them. |

I have finally made some pancakes yesterday and had leftover batter to make some today. My goodness were they the best pancakes I have ever eaten in my life. They were so good. I will share the link where I found the recipe with those of you who are curious. http://www.nourishingdays.com/2010/07/fluffy-coconut-flour-pancakes/ |

I've tried numerous pancake recipes but none reminded me of that true pancake consistency / texture...until I stumbled upon this: http://www.edibleperspective.com/home/2011/1/26/pancakes.html Calls for a couple tbsps coconut flour, a couple tbsps ground flax (as finely ground as possible), a couple eggs, coconut milk, then trace ingredients to make them rise / to taste. I make these every Saturday and Sunday and couldn't be happier! |
