This is what I endded up having for breakfast today (dried meat, banana, apple, strawberies, horseradish, chocollate, salad, sosage) instead of the usual scrambled eggs as the kids were ready for the outdoor trip earlier than expected.

Can you make more suggestions for finger food breakfast to be eaten in the car?

Is it an option to get up 30 minutes earlier to have time to focus on the actual eating (prioritised over the prep)? I think it's really important to be mindful when eating - it's so much more than just getting in fuel and nutrients... – Suz - Paleo Oz May 1 2012 at 4:59

I agree with Suz. Why not make the car a food-free zone (except bags of groceries, of course). Europeans don't seem to eat and drive. We bought a car here and there are no cupholders in the front seats. – gydle May 1 2012 at 6:46

Gydle: because American lifestyle is something funny. If you have to leave the house at 4am to get your children to school on your way to work (because you need to be out the door by 5am, and while school only starts at 7 you don't want the kids alone at home and at the bus stop...) yiu can start to see why lots of american families use the car as a eating area. – a tricksty trickster Jul 5 at 14:27

I make egg cups, basically eggs and veggies baked in a cupcake pan. Throw a little fruit in a tupperware and you have breakfast.

Eaten as the driver or passenger? If it's the latter, go nuts; the driver will take care of you.

The former? Go to bed, and wake up, earlier, or take it with you to work and eat there. As a driver, your job is to move a 2000-pound piece of steel and gasoline around many more 2000+ pound pieces of steel and gasoline. Without exploding. Eating should be way, way down on the list during this activity...

I'm a bike commuter and I've nearly been brained so many times by drivers who were too busy talking on their phone/doing their makeup/fussing with their kids to look where they're going. You might think you're not impaired but you ARE. – Maria May 1 2012 at 17:13

Boiled and peeled eggs.

Pre-made crust-less quiche.

Crockpot: Add beef stock. Add cubed veggies. Low overnight. Scoop into bowl in morning, sans liquid. Pop em' like veggie candy on the way.

Homemade pemmican/Nut-dried fruit bar.

Homemade jerky. Dried (insert vegetable)

Fruit. Already packaged.

Skewer. Leftover Meat. Leftover Veggies. Spear. Kabobs on the road.

Hamburger with fixings in lettuce wrap, in saran wrap. One hand cruisin', one hand eatin'.

Bacon strips. Baggie. Go.

Or fast?

Knarf, I don't understand your crockpot recipe. You put veggies and beef stock in a crockpot? I would think by the next morning they'd be soft and mushy, not anything deliciously edible as "veggie candy" sounds. Am I missing something? – DJDeeJay May 1 2012 at 21:14
Oh. Kind of? I said cubed veggies, so big chunks of things like radishes, carrots, zucchini, maybe even peppers. But yes, they would be sort of mushy. The beef stock is there to just give its flavor up to the vegetables. Maybe not as intelligent as I previously thought... – Knarf May 2 2012 at 1:51

I've made smoothies for breakfast on the road that include a blend of cold tea and coconut milk, two raw eggs, a banana, and some frozen berries. It doesn't keep me satisfied for much more than two or three hours, though.

I make a large omelette, say 4 eggs. Not just eggs, but anything else you wish to put in it. Cut it into quarters, store in tupperware container, and fish inside as you are driving.

OMG: ur having an 8 course meal while driving!!

I Vitamix my mobile breakfast: 4oz greek yogurt, 1 frozen banana, 1.5oz frozen strawberry, 3oz spinach cooked in .75 oz coconut oil.

It's about 400 calories, 22g fat, 30g carbs, 15g protein. I double the quantities, and make 2 servings so I have one already made in the morning. DELICIOUS !!!

Find small tomatoes, scoop out the inside, fill with egg. Take baby bell peppers and fill with browned sausage. Put some of each in a bowl and you have a bunch of breakfast morsels.

Corn tortillas, a la avoiding gluten. You can make your own! Properly sourced masa, lard, water. Or you can go crazy and grind up locally grown corn or something. – Knarf May 1 2012 at 15:33
