Does anyone have any creative uses for bone broth now that the warmer months are imminent?

I love using it in soups and stews all fall/winter/spring. I'm making another right now with a combo of turkey and beef. But I feel like I seasonally adjust away from these in favor of grilled veggies and salads, but I'm bummed about missing out on the benefits of bone broths.

I'm not one who drinks the stuff, so I certainly won't drink it cold either. But...I dunno...a beef bone broth aspic?

Reduce it (cook down) and turn it into a sauce for your foods.. similar to a demi-glace. Should go great on almost anything. You can add pretty much any ingredients for additional flavour. It'll taste even better if you brown the bones before making your broth.

Freeze it and incorporate it in place of ice in smoothies. I do this for my kids.

Agreed. If you don't salt/spice the broth while cooking, it's a neutral-tasting ingredient for summer smoothies. – January May 5 2012 at 6:44

Cold beef in jelly, serve with salsa verde or sauce gribiche. Vichysoisse (cold leek and potato soup).

You can use it as a broth for cool summer soups.

Second this! You could probably add chicken stock to gazpacho, which would be awesome in summer w/all the fresh tomatoes, peppers, etc. George over at Civilized Caveman Cooking has a great BBQ sauce recipe that calls for beef stock. It's delicious, and probably also a good call for summer grilling. – Amy B. May 6 2012 at 7:02

I do savory jello dishes with my bone broth when the weather turns warm -- beef tongue, shredded turkey, hard-boiled eggs, salmon, tuna. This spring I've also started making plain/unflavored jello just using bone broth and gelatin, it makes a nice, mild, cool snack. It's also helping shred off the last few stubborn vanity pounds, it's very satiating.

I add 1/4 to 1/2 cup chicken stock to my potato salad... maybe it could be used in other cold salads too, like a marinated vegetable salad or black bean salad
