How much coconut oil have you been consuming to see its positive results? For example, less foggy brain, weight loss, increased metabolism, etc...
I've not found coconut oil to be a magic elixir. It's a good fat for cooking. That's about it.
Less foggy brain, weight loss, increased metabolism is most likely coming from a switch from glucose metabolism to fat. Coconut oil will help because it is a medium chain triglycerides (MCT) and easily digested and used for fuel, but any fat will help.
Replacing your usual cooking fat with coconut oil, as part of a balanced Paleo diet, should do the trick.
If you still have foggy mind and other symptoms, it may be time to look further.
I think I have been consuming too little coconut oil. I just finished a 400 mL jar that lasted about 2 months, and that includes using it as tooth paste, moisturizer, etc. But I was still able to notice positive effects from the amount I ingested. Less cellulite, skin better, lighter period (I noticed those effects from coconut oil a few years ago too), etc. I didn't know what was helping with the fog, but now that you mentioned, it's possible it was evco too. It is also supposed to help with hypothyroidism.
I do think coconut oil is special, and there seems to be others that think so too:
I started taking Virgin coconut oil about 1 month ago (3- 8 tbsp a day). Pretty much straight away I noticed a series of changes: Increased energy levels. Sleeping less hours, but waking more refreshed. Weight loss primarily around my waist and hips. I didn't crave sweets, or any snacks between meals. Mental alertness was amazing. My eyesight seemed better. Skin smoother and softer.
I am still on it. Playing around with the amounts I consume, but I can honestly say that I have been very surprised by the changes I have experienced. The advice I can give is to just try it... It may work for you, it may not.
I buy coconut oil in 14 fl oz jars. Since April 2011 I have used 1 jar plus about 2 tbsp.
At first, the only time I used it was to smear it on the skin of poultry going into the oven. But I don't eat much poultry. My primary use of the first jar was as a base for home-made deodorant.
Lately I've been putting a tsp into my first mug of coffee along with the heavy cream and coffee. Since I am very sensitive to the taste, I find it very noticeable and I wind up spooning a mix of coconut oil and coffee off the surface 'til it's gone, then I drink the rest of the coffee normally.
I haven't suffered from brain fog since my first 2 weeks of being off wheat, but if anything I am less alert after the coconut oil and I think I'm going to stop putting it into my coffee.
