NOTE: it's my dessert after a day of nutritious paleo eating Just curious... I feel totally guilty as I go through my Paleo weight loss journey eating homemade coconut milk ice cream each day. But when I look at my ingredients I don't think there's anything wrong with eating this each day? I have a killer ice cream maker and it's just totally divine!
1/2 can coconut milk (BPA free, guar gum free) 3 drops liquid stevia 1/2 teaspoon pure vanilla extract
To me, it just seems like I'm putting whatever I'd use in a smoothie into my ice cream maker sans greens and the occasional fruit. I guess I'll watch to see if my weight loss stalls... which it shouldn't because good fats are GOOD FOR YOU :)
