NOTE: it's my dessert after a day of nutritious paleo eating Just curious... I feel totally guilty as I go through my Paleo weight loss journey eating homemade coconut milk ice cream each day. But when I look at my ingredients I don't think there's anything wrong with eating this each day? I have a killer ice cream maker and it's just totally divine!

1/2 can coconut milk (BPA free, guar gum free) 3 drops liquid stevia 1/2 teaspoon pure vanilla extract

To me, it just seems like I'm putting whatever I'd use in a smoothie into my ice cream maker sans greens and the occasional fruit. I guess I'll watch to see if my weight loss stalls... which it shouldn't because good fats are GOOD FOR YOU :)

I do exactly the same but with several Heaping TBSP of hi fat 11% plain greek yogurt. no additives.and a small tbsp organic unsweetnend shredded coconut.call it coconut pudding.. great for breakfast..and for a desert – jo60 May 9 2012 at 18:46

I use coconut milk, shredded coconut and raspberries - yum!

Checking in my cupboard, 1/2 can of coconut milk has 375 calories. At least you'll know what to cut back on if you're not meeting your goals.

Ice cream can be a great way to end the day. It is a good splurge for many people.

The ingredients are fine. Be conscious of the quantity, though - coconut milk is a very concentrated food, more so than would have been available to our paleolithic ancestors. Like shelled nuts, it's easy to overdo it.

I say go for it as I have all those ingredients each day but use them to make different things so I can't see an issue with it

This "ice cream" sounds pretty benign to me. If it's helping you feel good about your switch to Paleo and helping you eat Paleo the rest of the day, then I don't see any reason why you shouldn't keep eating it if you like it that much and you are meeting your health/fitness goals. Summer has always meant ice cream to me, so although I easily went the whole winter without it, I find I crave creamy cold desserts in the summer - especially to eat with the fresh strawberries coming out of my garden right now. I would love to have some of your coconut ice cream with my strawberries!

Not sure what the issue is. Ingredients seem pretty good, especially for ice cream. I try not to use stevia, but a lil' stevia in the diet is fine IMHO.

If weight loss is your main goal, as long as you are fitting this treat while still maintaining a caloric deficit it's fine.

When losing weight, it's important to focus on the most nutrient dense foods to ensure you get as much nutrients as possible w/ the least amount of calories. If you can still fit in the ice cream then go for it. Otherwise it would be the first to go for me, if I was not losing any weight.

Would I do is make sure I get my protein for the day (this does not really change regardless if I am leaning out, maintaining, or bulking). Then vary the carbs and fat accordingly. The more active, the higher the carbs, which in turns lowers the fat. If just doing low intensity work, then I can keep carbs lower, and up the fat. Of course you tinker, and find some balance based on what allows you to keep your body in a state where it can lose weight and you are not starving yourself.

If the Paleo ice cream has added sugar in it and you're eating it all the time, you probably won't lose weight. Here is the problem with food.....the more fancy you try and make it, the less better it is for you. Paleo or no Paleo. Keep it simple. Buy a grass fed steak and grill it, buy some organic spinach and eat it. This is where mainstream food went wrong. The more fancy they try and make things, the worse it is for you.

I think it's ridiculous to equate paleo to simple (or healthy to simple)...there's nothing wrong with gourmet paleo cooking...which can be simple, or complex. – Blossom1 May 9 2012 at 18:13

Hey Emm,

If it's working for you, keep doing it ! The guilt is worse for you ran the coconut milk :)

When I first started eating more fat I did the same as you- only difference is that I added some cocoa powder. It sets in the fridge like a mousse! Add some berries and cinnamon...

I still eat this frequently, but not quite daily as ive found other ways to incorporate 'good' fats in my diet.

If the paleo ice cream is all you're eating, that's a problem.

If you're having it daily on top of a varied and nutritious diet, that's great. Treat it like a snack, not as a meal.
