I have been reading most of the posts daily trying to learn as much as I can. I would like to make a Paleo Dessert for Mothers Day. Any Suggestions? Can I substitute almond flour in a recipe that calls for Tapioca Flour, or will it not stick together very nicely? Here is the recipe I am looking at making. http://fastpaleo.com/lemon-blueberry-cobbler-divine/ or http://fastpaleo.com/strawberry-swirl-cheesecake/ What I would really like is a Strawberry Rhubarb cobbler or crisp, but I don't know if thats possible without some sugar. Thanks Diane

Like Kelly said, google paleo desserts and you'll be surprised at how many recipes there are out there. With that said I'd like to recommend The Gluten Free Almond Flour Cookbook. I sub out the agave for honey since agave is pure fructose and that messes with my tummy. I made a wicked chocolate cream pie from her book which is also dairy free. Give yourself lots of time since it's all from scratch. Besides making the pie crust from scratch you can also consider store bought if you're near a Whole Foods. I know they carry gluten free pie crusts but I'm pretty sure they have other types of grain in them and butter. I've never tried them but hear they are delicious and may work depending on your time and goals. Elana's Pantry - Desserts: EveryDay Paleo: Berry Good Cobbler Good luck and have fun!! |

At this time of the year I cannot imagine anything better than fresh strawberries. They combine wonderfully with basil, mint, balsamic vinegar, red wine (bordeaux type), pepper... only one of these at a time, please. And if you do dairy, strawberries with vanilla-scented cream is pure luxury in my mind. |

There's loads that you can do that don't take a ton of time which means more fun to be had with friends and family :) Sub coconut sugar for regular sugar and tapioca starch for anything that may call for cornstarch. Some ideas:
Or my absolute favourite in the entire world: a bowl of fresh strawberries, sliced, topped with whipped cream and a little chiffonade of mint. And a big spoon. Any of these with a nice bottle or two of Cava and you're done. Good luck! |

I assume you would like to create something that will please your Mom and the rest of the crowd that you will also be able to eat yourself? I would guess that rhubarb is hardly palatable without tons of sugar. Just my guess. At least not for someone on a SAD diet. I recently came across a recipe for lemon meringue cookies and tried it with half the sugar called for in the recipe. It was very delicious and still a bit too sweet for me. But with even less sugar or some other sweetener it would pass as "primal". Or anything in the area of meringue with whipped cream and berries and little to no sugar would make a nice primal summer dessert, I think? |

I googled 'paleo apple crisp' and came up with lots of hits. You should be able to translate for rhubarb. Although getting enough sweet for rhubarb strikes me as a challenge. Rhubarb is bitter sour stuff (I LOVE IT!)(but probably because grandma cooked it with LOTS of sugar). Also, BACON BROWNIES: http://fastpaleo.com/bacon-brownies/ |
