We use coconut oil mainly, olive oil somewhat but cannot find a store-bought mayonnaise made solely with these. All have either safflower, sunflower, soybean or canola or a combination of these. Of these which would best choice if only used infrequently? Maybe once a week.

You can make your own mayonnaise with a mixture of coconut oil and olive oil or bacon fat. You can use any fat, but have part of it as olive oil makes it not harden as much in the refrigerator. Mayonnaise is simply an emulsion of fat with egg yolks with a bit of flavoring from lemon juice and mustard. Here is a recipe I posted for making paleo mayonnaise: |

And the dark horse of this race is any of these oils as "high oleic." That means the crop was bred to be mostly monosaturated which is a preferred fat, alongside omega-3 and saturated, in the paleo diet. I've seen mayo with high oliec sunflower oil. Otherwise, canola has the least amount of omega-6, so it's probably better. I order my mayo from Wilderness Family Naturals. Kind of expensive, but I also only use it infrequently anyway. I made my own mayo. I hated making it. Like really hated. It was a huge chore and I don't have time. Plus good olive oil is $$$$ and hard to source. I think I saved money ordering it from WFN. |

I make my own with olive oil. I first tried it with EVOO, but it tasted really bad (maybe the oil was rancid, though I had only had it a couple of weeks). I've had better success with "light tasting" olive oil, though I'd welcome any thoughts about what that processing might be doing to the olive oil. |

I make my own mayo from avocado oil. I found a Hamilton Beach stick blender at WalMart for $19.99. It has a whisk attachment and does may beautifully. I can make my mayo in a 2 pint wide mouth jar in about 5 minutes with this little jewel. I only make 4 ounces at a time so I never waste any. It only keeps in the refrigerator for about 7 days. There are many videos on youtube showing several different ways to make it. I tried many different brands of Olive oil. It was always too strong. The only one that was good was made with a light olive oil. After I made it I found out the the light olive oil was mixed with other oils such as canola. I did try the Macadamia nut oil but thought it tasted rancid. I may try the flax oil. Avocado oil is pretty expensive but I think it is worth it. |

Title of my new book: "Life without Mayo". Srsly. I just go without. Can't be bothered to make it and I don't use enough of it to bother. My wife (not paleo) has Hellman's in the fridge if I ever get that desperate. Why would I need mayo? I don't eat sandwiches. I don't eat much canned tuna either. Or potato salad. Can't think of why I would need it. Okay, maybe devilled eggs... Tried making some once, MD Eades recipe, what a mess! My wife said "What's this all over the wall and cabinets? You better clean that up!" It lasted 2 weeks and I threw most of it in the trash... Never again. |

I make flax oil mayo. It's pretty good. I'm sure there is a recipe online. I think I found mine in The Primal Blueprint Cookbook. |

It is a bit labor-intensive, but homemade mayo is way more delicious than anything I've ever found in a store. Toss in some finely minced garlic and good French mustard, and you've got one wicked condiment. |

I use macadamia nut oil for mayonnaise. It's very nutty tasting so I get my nut fix from that. |
