We use coconut oil mainly, olive oil somewhat but cannot find a store-bought mayonnaise made solely with these. All have either safflower, sunflower, soybean or canola or a combination of these. Of these which would best choice if only used infrequently? Maybe once a week.

You can make your own mayonnaise with a mixture of coconut oil and olive oil or bacon fat. You can use any fat, but have part of it as olive oil makes it not harden as much in the refrigerator.

Mayonnaise is simply an emulsion of fat with egg yolks with a bit of flavoring from lemon juice and mustard.

Here is a recipe I posted for making paleo mayonnaise:

And the dark horse of this race is any of these oils as "high oleic." That means the crop was bred to be mostly monosaturated which is a preferred fat, alongside omega-3 and saturated, in the paleo diet. I've seen mayo with high oliec sunflower oil. Otherwise, canola has the least amount of omega-6, so it's probably better.

I order my mayo from Wilderness Family Naturals. Kind of expensive, but I also only use it infrequently anyway.

I made my own mayo. I hated making it. Like really hated. It was a huge chore and I don't have time. Plus good olive oil is $$$$ and hard to source. I think I saved money ordering it from WFN.

Yeah, I've seen the recipes for homemade mayo but I'm not at all inspired to try making it myself. I actually did just find a Spectrum Organic Omega 3 Mayonnaise made with expeller pressed flax and soy oils. Hopefully since it's organic the soy in non-GMO. Seems a better choice than the others. I hadn't seen Wilderness Family Naturals one but it looks great - only thing is Sesame. I think it was one of the things that came up positive on my allergy test. – Candice Oct 11 2010 at 4:12
Soy oil is horrible, even organic non-gmo – Stephen-Aegis Oct 11 2010 at 20:18

I make my own with olive oil. I first tried it with EVOO, but it tasted really bad (maybe the oil was rancid, though I had only had it a couple of weeks). I've had better success with "light tasting" olive oil, though I'd welcome any thoughts about what that processing might be doing to the olive oil.

Your EVOO is probably not rancid, but mayo made with only EVOO will taste much too strong IMO. Try having a shot of pure EVOO and you'll understand why. – Paleo Seb Oct 10 2010 at 23:57
Yep, I use "extra light" olive oil for the same reason. EVOO is actually a very strong flavour. – stephthegeek Oct 11 2010 at 19:04

I make my own mayo from avocado oil. I found a Hamilton Beach stick blender at WalMart for $19.99. It has a whisk attachment and does may beautifully. I can make my mayo in a 2 pint wide mouth jar in about 5 minutes with this little jewel. I only make 4 ounces at a time so I never waste any. It only keeps in the refrigerator for about 7 days. There are many videos on youtube showing several different ways to make it. I tried many different brands of Olive oil. It was always too strong. The only one that was good was made with a light olive oil. After I made it I found out the the light olive oil was mixed with other oils such as canola.

I did try the Macadamia nut oil but thought it tasted rancid. I may try the flax oil. Avocado oil is pretty expensive but I think it is worth it.

Title of my new book: "Life without Mayo". Srsly. I just go without. Can't be bothered to make it and I don't use enough of it to bother. My wife (not paleo) has Hellman's in the fridge if I ever get that desperate. Why would I need mayo? I don't eat sandwiches. I don't eat much canned tuna either. Or potato salad. Can't think of why I would need it.

Okay, maybe devilled eggs...

Tried making some once, MD Eades recipe, what a mess! My wife said "What's this all over the wall and cabinets? You better clean that up!" It lasted 2 weeks and I threw most of it in the trash... Never again.

Deviled eggs with anchovies. 'nuff said. – ABP Oct 12 2010 at 6:01
Tasty! Totally off-topic: After almost a year of wanting to make a meatza, I finally did last weekend. Awesome! Of course, anchovies were included. – Dave S. Oct 12 2010 at 12:34
LOL! That's what worried me. A running blender and drizzling oil seemed like a recipe for disaster. We didn't eat much tuna either because it was always in cans but we recently found wild caught tuna in olive oil in glass bottles so now we're eating a little more of it. My little girl loves tuna, cucumber and mayo and I struggle to get her to eat enough protein. – Candice Oct 12 2010 at 18:54

I make flax oil mayo. It's pretty good. I'm sure there is a recipe online. I think I found mine in The Primal Blueprint Cookbook.

I have that cookbook and saw the mayo recipe but haven't really found the time or inclination to try it. Maybe I need to just do it. – Candice Oct 11 2010 at 4:13

It is a bit labor-intensive, but homemade mayo is way more delicious than anything I've ever found in a store. Toss in some finely minced garlic and good French mustard, and you've got one wicked condiment.

I use macadamia nut oil for mayonnaise. It's very nutty tasting so I get my nut fix from that.

I like the sound of macadamia nut oil mayo! I have some in the pantry. I love the Mac Nut Butter! Dangerous to have in the refrigerator though. – Candice Oct 11 2010 at 4:14
about one year ago we just stopped having any kind of nutbutter in the house. Its simply too easy to ingest so many nuts. I honestly believe its prolly not a good way to consume nuts. I think when you masticate them on your own theres just a more natural satiety and idea of how much youve consumed with all the jaw-work, etc. That being said, nutbutters of pretty much any kind are ridiculously tasty and a classic peanutbutter sandwich would be one of my last meals:) – ben61820 Oct 11 2010 at 14:05
