I know that carbs and excess protein raise BG levels but what affect does fat such as coconut oil have on BG levels?

I've researched this before and from what I recall around 3% of dietary fats get converted into blood glucose. I experimented on myself (I'm a Type 1 diabetic) by drinking a pint of heavy whipping cream but found it had no impact on my BG.

Yes. Fats come packaged as triglycerides (usually). That's three fatty acids and a glycerol backbone holding them together. Two glycerols can form one glucose molecule, which gives about 3-4% of the energy of the fatty acids. It's really negligible. A high fat/low carb diet CAN increase blood sugar levels due to the effect that free fatty acids have on peripheral insulin resistance. But it's not through a direct raising of blood sugar. Coconut oil may have additional effects because of the extra ketone generation that would spare even more glucose. – Dave S. May 14 2012 at 12:49
