I thought I'd start a conversational sort of thread here with a nice simple question - what are you fine folks cooking for dinner? (Or what did you cook for dinner?)

If you're particularly proud of your culinary efforts, pop in a quick recipe as well! Let's share some ideas.

Beef ribeye cooked in coconut oil seasoned with sea salt and kelp granules with carrots and broccoli also cooked in coconut oil seasoned with turmeric and paprika.

Seared scallops (wild caught, seared in Kerrygold), baked sweet potato (served with plenty of Kerrygold), and a salad of mixed greens, mushrooms, and sliced beets.

Tonight - A warm salad of spinach, sweet potato, zucini, tomato, bacon and goats feta will sit proudly next to my medium rare scotch fillet.

Tomorrow night - Osso Bucco slow cooked with onions, tomatoes, bacon, olives and a squeeze of orange juice will spill deliciously over cauliflower mash.

Also getting my soup n freeze on this week. Zucini, fennel and leek soup (scarily easy - just chop up the veggies and sautee until fennel is translucent, almost cover with chicken stock/broth, simmer for 15 mins then give it a burst in the blender. Oh my!!). This will also be served with a good helping of crispy bacon on top and a side of spinach drizzled with lemon, oil and basil.

I know I know - Common theme of bacon. Blessed is the bacon!

Soup.

Ingredients (I steam them first, then add to bone broth):

broccoli

red cabbage

cauliflower

spinach

green onions

red onions

mushrooms

carrot

celery root

pumpkin

beets

artichoke hearts

fennel bulb

chicory stalks

parsley

basil

lamb

One of my favorite primal meals to date has gotta be a Big cobb salad! This meal defiantly has all the fats covered.

6oz chicken breast
2-3 slices of bacon
Cherry tomatos
1/4 cup blue cheese
1 large hard boiled egg
1/2 cup cubed avocado
2 cups shredded romaine lettuce
1 cup fresh spinach

The dressing is a mixture of apple cider vinegar, extra virgin olive oil, Dijon, Worcester sauce, chopped garlic, salt, pepper and lemon juice.

Another great option is grilled beef heart and sauteed veggies!

Tonight was two 1/3lb grass-fed beef patties, topped with:

Half a package of bacon
A good size chunk of local goat cheese
An avocado, in chunks
A half-inch thick slice of liverwurst, briefly fried on each side in bacon grease

Along with some broccoli and creminis on the side, also sauteed in the bacon grease.

In fact, that was breakfast/lunch/dinner in one; I find it much easier to fast on the weekends.

I will have chicken and chips with salad and mayo followed by some chocolate desert. Not paleo but monday is a day I cheat as I HATE MONDAYS!

Hanger steak that I charred on the grill last night and finished in the slow cooker for 8 hours in my perpetual tomato sauce / beef both broth combo. I'll figure out the veggies when I get home - Probably sauteed spinach with crushed garlic and cherry tomato.

Not having this tonight, but I wanted to share. I made this a couple of weeks ago and my husband thought it was the best meal I'd ever made. I thought it was pretty good too. I substituted butternut squash for the pumpkin b/c I was out. Also left out the cashews b/c I was out, but I'm sure they're great in this.

Sauted Orange Chicken with Ginger

3 pounds chicken legs and/or thighs pepper 2 tbsp olive oil 2 cloves garlic, finely chopped 1 cup orange juice 2 navel oranges, peeled and sectioned 2 Tbsp minced fresh ginger 1 tsp dried basil 4 tsp lemon or lime juice (a substitute for vinegar in original recipe)

Season chicken with pepper. In a large fry pan, heat oil over medium heat. Add chicken and cook, turning, until brown all over, about 10 minutes. Add garlic and cook for one minute. Pour orange juice over chicken. Add orange sections, ginger, lemon/lime juice, and basil. Stir well. Cover and simmer for about 30 minutes, until chicken is tender.

I did a big pork shoulder in ths smoker over the weekend - we're going to be eating on that thing ALL week!
