Tonight - A warm salad of spinach, sweet potato, zucini, tomato, bacon and goats feta will sit proudly next to my medium rare scotch fillet.
Tomorrow night - Osso Bucco slow cooked with onions, tomatoes, bacon, olives and a squeeze of orange juice will spill deliciously over cauliflower mash.
Also getting my soup n freeze on this week. Zucini, fennel and leek soup (scarily easy - just chop up the veggies and sautee until fennel is translucent, almost cover with chicken stock/broth, simmer for 15 mins then give it a burst in the blender. Oh my!!). This will also be served with a good helping of crispy bacon on top and a side of spinach drizzled with lemon, oil and basil.
I know I know - Common theme of bacon. Blessed is the bacon!
