Hey guys, I don't normally eat breakfast but I'm struggling to eat enough calories each day (avg 1000 calories) I feel that I need to increase this and eating breakfast seems a good place to start.

I already have to wake up 3 hours before I start work so I really don't want to have to wake uo even earlier. Because I have to travel an hour and a half it seems that the easiest option is to eat on my way to work which would make eating bacon and eggs a bit hard :P

My plan is to make a batch of breakfast bars on Sunday night so I have them ready each morning. Because I'm trying to lose weight (about 20Kilo)

I'm avoiding nuts and fruit, but I was thinking because my calories are so low then maybe a small amount each morning wouldn't be too harmful.

Any recommendations would be much appreciated

Here is one we use sometimes. You can tweak the recipe quite a bit so it doesn't need nuts if you don't want them. It is primarily eggs, sweet potato, banana and coconut oil.

That looks super yummy, Jesse. I don't want to be disrespectful, but that recipe seems to be pretty heavy on carbohydrate, though. I'm not anti-carb by any means, but if someone is trying to lose weight, starting the day with that much carbohydrate may be problematic if Julia is trying to repair a broken metabolism. @Jared, you're severely limiting yourself here on your choices here. The thing you should realize is that carbs are not evil. You can lose weight on eating just carbs. If you want flavor it's either carbs or fat. You can't have it both ways. Otherwise just eat seasoned chicken. – Rob Jul 5 at 14:24
Forgot to add one more thing. Just because the Paleo lifestyle doesn't support calorie counting, that doesn't make you immune to the calories in vs calories out concept to losing weight. – Rob Jul 5 at 14:26

Don't have a bar recipe-- but why not try hard boiled eggs, homemade beef jerky, or a 'sandwich' made out of whatever leftover meat you have wrapped in lettuce (just make it the night before so it's grab and go). Other options are a green smoothie, made the night before in a 'to go' cup.

I also have made mini-'quiches' (without the crust), using scrambled eggs and tons of veggies (plus cheese, if you're primal)-- mix it all up, pour them into greased muffin tins (no wrapper needed) and cook in a preheated 375* oven until firm. Once cooked, pop them out of the muffin tins (the silicone muffin tins make this super easy to do)-- then you have a hockey puck sized 'quiche' that you can reheat (or not) to grab and go in the a.m.

I've made those mini quiches. They are really easy to freeze too. Make a big batch on the weekend, freeze, then pop out a couple the night before work and you're good to go. – twochickadeez May 17 2012 at 12:48

CanNOT believe I neglected to include bacon in that recipe (or sausage, or ground beef)-- just diced it/or break it up-- also ensure that whatever meat you include is already cooked-- the veggies can be either cooked or raw, whichever you prefer (but it's a great way to repurpose leftover veggies!) – LiveFabuLESS May 18 2012 at 12:15

If you're trying to lose weight don't eat when you're not hungry. There is no rule that you must eat breakfast.

If added calories are what you're after then try adding more fat to you meals. 1000 cal isn't enough food for anyone.

But if it's breakfast you're after, bacon is portable. So are hard cooked eggs. Meatballs. Lettuce wraps. Smoothies.

I'm not sure if you avoid to eat chestnuts too. If not just put a whole bunch of them in a food processor, together with some coconut oil and vanilla. Shape the stuff into bars. Let them sit in the fridge until they're firm, and cover with a thin layer of 85% chocolate.

For sweeter bars, add dates....

I drink espresso with a tablespoon of coconut oil and two tablespoons of heavy cream and a pinch of cinnamon. This will give you roughly 250 calories worth of natural fat that will not only sustain you until lunch, but keep your mind sharp and your energy up!

Since you are trying to lose weight, the medium chain triglycerides in the coconut oil actually helps you burn fat, as well. Google "MCT ketones fat loss" to get the gist of it. – jared May 17 2012 at 12:56

If you are looking for something savory try hard boiled eggs wrapped in a thin layer of (homemade) pork breakfast sausage to make a 'scotch' egg. I love these with mustard.

You can make a batch of whipped eggs with bits of veggies and bacon chopped up, pour into muffin tins. I make these every 2 weeks and freeze for hubby's on the go breakfast. Super fast to reheat and eat.

I've made plenty of breakfast bars using nuts, coconut, almond flour and protein powder. If you aren't eating more than a bar a day its really not more than 200-300 calories and if you make it right, it can be perfectly balanced. I did this even when I was trying to loose weight. Definitely avoid dried fruits unless you made them-but divided over 8 servings a bit add flavor, like dates, don't over do the nuts and its ok.

yeah, my point was if you arent eating a cup of nuts and fruit in every bar, a little wont hurt you.....and you can substitute others things into the receipe as you choose including protein powder – Kelly May 17 2012 at 21:23

It's going to come down to calories. If you're eating ad libitum then yeah, oversight nuts and fruit is much easier than overeating chicken breast. If you can stand to moderate your eating habits, though, a handful of nuts or dates here and there in the context of your overall diet won't stall your progress. – Matthius May 17 2012 at 17:18

The small amount of fruit and nuts that would be in a single serving breakfast bar would probably not affect your weight loss goals. Remember, that while fruit and nuts are discouraged in large quantities while dieting, you should still be eating a variety of foods to get a variety of nutrients. – Divrgurl13 May 23 2012 at 23:21
