My bone broth is being strange this time. I have two crockpots going and one of them is bubbling up. Half of it keeps building up under the lid like it's full of soap bubbles. I am pissed that I may have left some soap in that crockpot when I cleaned it and now my broth in that pot is ruined. Is it likely to be soap or is bubbling somewhat normal? Is there any way to save this broth that's already been going for 48 hours?

If one crock pot cooks at a different temperature than the other, it could explain one bubbling, when the other doesn't. Also, if you add acid, as many do, perhaps a reaction with minerals in the bones explains it. When I make stock, it often foams at the beginning, but usually not all those hours later. Such bubbles could be described as scummy and dull. Soap bubbles often appear irridescent or silvery (with "rainbow" colors refracting). I think you should (bravely) taste it. Soapiness seems pretty distinctive and easy to taste. If you're sure it's soap, I don't know any way to remove it. |
