As we've transitioned to Paleo, my boyfriend is concerned about the amounts of cholesterol and saturated fat we may be consuming. Specifically, the number of eggs that we've been consuming. It's at least 2 per day, and I wouldn't hate eating more. I know several people on here eat upwards of 4-6+ eggs a day. Are there any sources for (preferably peer-reviewed type studies) information supporting that the amount of saturated fat and cholesterol are not to be concerned about. I should note that the eggs we buy are local, pastured, organic. I assume that has some impact on the nutritional values.

The more saturated fat we consume, the less our body needs to produce. Our brains are made up of fat.Were fatavores:) Cholesterol is actually a necessary nutrient for the body which it can not produce. So eat up your saturated fat for energy, mental health and for a happy life. Trust me as once being a raw vegan, it all goes downhill when you don't have fat and try to run on carbs and crap.
And if all those good answers aren't enough, and you have a couple of months to spend reading, then read Gary Taubes' "Good Calories, Bad Calories".
The key here is to remove yourself from the current SAD way of thinking and start to make your own decisions based on actual science. You think you eat too much cholesterol and saturated fat because you've been told those things are bad. But what if they aren't...?
